Low-fat Brownies

These rich-tasting brownies have less fat yet still taste
great! Helpful hint: Be careful not to overcook.
¼ cup skim milk
¼ cup semisweet chocolate chips
1 ½ cups all-purpose flour
½ cup unsweetened cocoa
1 teaspoon baking powder
½ teaspoon salt
1 ¼ cups sugar
5 tablespoons I Can’t Believe It’s Not Butter,
softened
½ teaspoon vanilla extract
2 large eggs
Cooking spray
Preheat oven to 350 degrees. Boil skim milk in a small saucepan,
add chocolate chips and reduce heat. Stir until smooth and
remove from heat. In a medium bowl, whisk together flour,
cocoa, baking powder, and salt. In a large bowl, combine
sugar and margarine and beat with a mixer. Add vanilla and
eggs and beat again. Slowly add flour and milk mixtures to
the sugar mixture and beat just until mixed. The batter may
be tougher than usual brownie batter. Spray a 9” x
9” baking dish with cooking spray and cook for 25-30
minutes or until a toothpick inserted in the middle comes
out clean.
